NATURAL wines
MINIMAL INTERVENTION.
We are an urban winery in Tijuana. We bring the grape from the valleys. We work with varietals from different regions of our lands in Baja California. We learned how to make wine at La Escuelita, in 2005, later we took more specialized courses. The winemaking techniques we use are rather traditional and completely artesan. Carbonic maceration, where the grape, in their whole clusters begin to ferment from the inside out. Natural fermentations with native yeast from grape skins, without adding anything, not even sulfites. We let the wine rest on its lees. We are pioneers in natural winemaking, with minimal enological intervention. We seek the expression of origin, of the terroir, what the land gives us.
